Well, it's that time again for my "wonderful" weekly menu. I know some of you hate when I put this one, but I'm sorry. I've had several people tell me how much they appreciate and enjoy it! Yay! So, here's this week's menu...

Sunday - Tacos

Monday - Onoion Topped Chicken

Tuesday - Beef Stew

Wednesday - Chicken & Broccoli Noodle Casserole

Thursday - Saucy Beef Over Rice

Friday - Creamy Chicken Alfredo

Saturday - Frozen dinner

I've also decided to start the dessert try out this week. Remember a few weeks ago I said that I have sooo many dessert recipes that I haven't even tried, but I wanted to? Well, I decided to start this week with carrot cake. Now, I must say, I have done this carrot cake recipe before, but I am part of an organic veggie co-op and we get carrots almost every time, so I have tons. I just decided I needed to get rid of some of them faster, so they're destined to be carrot cake. This is a "from scratch" recipe from my Mother in Law. I really never liked carrot cake before I tried this one, but this one is great! I've put it below along with another recipe from this week's menu. So, enjoy, and if you try any of it, LMK how you like it.

Carrot Cake & Icing

2 c. flour

2 c. sugar

2 tsp. cinnamon

2 tsp. baking soda

1 tsp. salt

1 c. oil

4 whole eggs

3 c. grated carrots

1 c. nuts

Mix all ingredients and bake at 350 degrees for 45 min. to 1 hour. Top with icing.

Carrot Cake Icing

1 box confectioner's sugar

1 - 8oz. pkg. cream cheese

1 tsp. vanilla

Mix until smooth. Spread on cooled carrot cake.

Chicken & Broccoli Noodle Casserole

1 -16 oz. jar alfredo sauce

1/3 c. milk

2 c. cooked, shredded chicken

1 -9 oz. frozen chopped broccoli, thawed

8 oz. egg noodles, cooked and drained

1 c. shredded cheddar cheese

1/4 c. chopped roasted red peppers

Preheat oven to 350 degrees. In lg. bowl combine sauce & milk. Stir in chicken, broccoli, noodles, 3/4 c. cheese and peppers. Evenly spread mixture in 13 x 9 pan. Sprinkle with remaining cheese. Bake 30 minutes or til heated through.

Both of these recipes are pretty easy. Hope you have a Yummy week!! :-)

Who could hate you posting your menu???? I'd love to try the carrot cake recipe, but the very thought terrifies me. Since I've lived in Colorado the past 25 years, I've come to dislike baking. Carrot cake is one of those that I've flopped probably more than anything. I guess I'm going to have to find a high altitude recipe for it.

Keep posting your menu!!!
